Eggplant Parmigiana

My oldest daughter is due any day now and she been trying just about everything to get the baby out.  The latest thing was eggplant parmigiana...and if I have to say so myself it was good.  She got the recipe from  Scalini's Free Italian Restaurant it's in Smyrna, GA.  They have a page called "mothers to be" that has the recipe to help make labor start 48 hours. But alas no baby yet!  It was really good anyway.
